Ingredients

• 120 g cannabis infused coconut oil or infused butter

• 130 g smooth peanut butter or other nut or seed butter

• 60 g sunflower spread or vegan butter

• 250 ml almond milk

• 1 tsp vanilla essence

• 20 g honey or cannabis infused honey

• 250 g gluten-free rolled oats

• 80 g organic brown rice flour

• 100 g packed brown sugar

• 50 g white cane sugar

• ½ tsp Himalayan pink salt

• ¼ tsp cinnamon (optional)

• 20 g cocoa powder (optional)

• 150 g mix-ins such as raisins, nuts, seeds, chocolate chips, or coconut flakes

Equipment

• Two mixing bowls

• Wooden spoon or spatula

• Baking tray approximately 15 × 20 cm

• Greaseproof paper or parchment

• Oven

• Double boiler or slow cooker for infusion if needed

Directions

1. Preheat your oven: Preheat the oven to 200°C. Line a baking tray with greaseproof paper and set aside.

2. Mix the wet ingredients: In a large bowl, combine the cannabis infused coconut oil, peanut butter, sunflower spread, almond milk, vanilla essence, and honey. Stir until smooth and creamy.

3. Combine the dry ingredients: In another bowl, mix the oats, rice flour, brown sugar, white sugar, salt, cinnamon, cocoa, if using, and your chosen mix-ins, such as raisins, seeds, or chocolate chips.

4. Blend everything together: Gradually fold the dry ingredients into the wet mixture. Mix until the batter is evenly combined and sticky. If it feels too dry, add a splash more almond milk.

5. Bake: Press the mixture evenly into your prepared tray and bake for about 30 minutes, or until lightly golden and firm. For an extra treat, sprinkle chocolate chips on top near the end of baking so they melt slightly.

6. Cool and cut: Let the tray cool completely before cutting into bars. This helps them hold their shape and texture.
